This is a beautiful idea.   Thanks for sharing.   FYI, the middle can be wrapped using another short length of wire.   Simply wrap the middle several times with either the same wire or if it's too thick, use a smaller gauge and snip the ends...file to remove any burrs and there you go.   The knot looks lovely though.
