When I used to make brownies for the classroom (the public schools do not let you bring in home made goods... you have to buy storebought - yuck!!) I used to bake them in muffin tins. The teachers all thought I was just walking on water - that and I wouldn't put cupcake liners on the cupcakes for the preschoolers. They always thanked me for that one.. they spend a bit of time taking off liners and chucking them - or the kids eat the paper and complain... but the brownies.. yeah.. made them in muffin tins.  perfect single serves each time.  Love those mini muffin tins.. Hmmm.  I think this weekend I need to make a batch of chocolate chip banana muffins. Yum. So tasty!!

I love my mini muffin tins... and the kids think they are so cool getting mini muffins.. and when I need to bring in baked goods for the teachers (the teachers are okay for you to bring in baked goods for their functions but you are not allowed to bring them in for snacks for the kids.. no cupcakes or cookies. nothing) a batch of muffins looks more impressive and more to it if they are done up as minis... you get like 5 or 6 mini muffins maybe more out of each regular sized muffin so it just looks like you made more than you actually did Grin

Oooh I love mini's! 

I really like that it's low commitment.  You can have just one or two mini's of different kinds rather than commit to a big muffin of one kind. Smiley

I like mini cookies too!  I think I'll make some mini lemon cookies for next week. 

That totally sucks that they won't let parents bring home-baked goods for the class anymore...although in their defense, I've had some truly awful experiences with potlucks and such.  Not everyone can bake and/or cook.   Tongue

I got cookie dough in the fridge so I can bake up some fresh ones tomorrow morning... I wanted to make more than 2 kinds but ran out of ingredients so sadly it looks like I'll only be toting in 2 different kinds... maybe three .. we will see tomorrow but definitely 2.
Okay.  Time to get the littlest one in to bed and then settle in for the survivor finale..

what time are we meeting??
