I used Guinness, in a effort to keep the "Irish Car Bomb" cupcake authentic to the "Irish Car Bomb" bar drink.  Smiley

The possibilities with beers are endless.  I have used Guinness, Youngs Double Chocolate in the past (for brownies), along with Framboise Lambic.  All came out yummy.

Yummy Raspberry Lambric and chocolate!  I am going to try to make these without oil and with applesauce instead.  I have been craving them since I made them!  I have a sneaky suspicion that I might ingest half the batch. I live alone and nothing is more alluring then a platter of cupcakes.

I highly recommend the bulk bins at the grocery store.  I bought a little bit of everything so there would be a lot of variety.  Good Luck!

We have the Rogue Chocolate Stout at my cafe where I work. Chocolate beer is delicious!

I think I didn't measure right so the frosting came out a bit runny.  But it created the shinny and slick chocolate surface on the cupcakes.  It also was really easy to apply the different toppings.  On with the recipe!

Fudge Frosting

1/4 cup heavy or whipping cream
1 1/2 tsp. corn syrup, I used light
2 tbsp sugar
1 1/2 tbsp unsalted butter
1 tsp vanilla
1/3 cup i.e. 2 ounces semisweet chocolate coarsely chopped

in a small saucepan place 1/4 cup cream
                                   1 1/2 tsp corn syrup
                                   2 tbsp sugar

bring all of them to a boil on high heat and then remove

add 1 1/2 tbsp butter
      1 tsp vanilla
      1/3 cup chocolate

stir until the mixture is melted and smooth

refrigerate until it is spreadable

I couldn't wait so I dunked the tops instead. It is very easy!  Happy cup caking!
