My niece will be 2 soon, and her mum has asked if I'll make her a birthday cake. Only problem is, she's allergic to milk, so all my current recipes are no good.

Can anyone suggest a good, tasty dairy-free cake and frosting recipe?

easy recipe:

chocolate

3 cups flour
2 cups sugar
2 tspn baking soda
1 tspn salt
8 TBspn cocoa powder
3/4 cup oil
2 cups water
2 tspn vanilla
2TBlspn vinegar

sift dry ingredients together. Add liquids and mix. bake at 350 degrees until done (`30 minutes). This is from my head (i make it a lot) but can't remember how long it bakes. I check on it when i can smell it.  Cheesy i used to be a professional baker and somehow that system never failed me.


changes:

add mint, almond or other flavor to give it a kick.

almond rum cake- add a bit of rum, kahlua or flavored alcohol and reduce liquides. add almond flavoiring. yummy with raspberries.

coconut cake- delete cocoa powder and add 1.5 cups of coconut.

this cake is fluffy and no one will know its vegan. its an old recipe from the depression. i've modified it a million ways and its hard to mess up! Grin

i made that chocolate cake before, it's surprisingly good! 

if you put some marshmallows on it when it's ready and put it back in the (turned off) oven for a few minutes, let them melt and spread them over it it's really good too. defeats the whole vegan aspect of the cake though.

I know it uses beer but all the alcohol cooks out during the baking process.  These cupcakes are very fluffy and delicious!  Good luck!

i forgot to say. if he is allergic to wheat you can use spelt flour. Oat is heavier but works sometimes too. if its gluten allergy then the recipe above won't work! Cheesy

I'm sure you can find recipes online, but if you are in a pinch, most big chain grocery stores use a non-dairy whip topping for their "whipped cream" cake frosting.  You can ask, and I'm sure they would be happy to sell you a tub.  It would save you time.

My favourite, I found it on the internet. With eggs, but I gather eggs are no problem for the girl?

3 eggs
140 g sugar (I actually usually just eye this and it works...)
150 g flour
2 tablespoons water and 2 spoon rum / 4 spoons water (I always use simply water)
1 teaspoon baking powder
+ something to grease the form and flour to prepare it. Or whatever else works with you.

Beat the yolk with the sugar, then gradually add the water and stirr until nicely smooth. Add flour and baking powder.
Beat the egg white into snow and add to the mix (or add the mix to the snow: that's what I do, because my beating bowl is bigger.)
And bake in a greased and flour-ed form. In my hot-heat oven I usually bake this on 180 Celsius. I don't remember how long exactly, but I believe for 30 minutes or so.
It's quite a small cake, I usually top it with fruit and jelly; so maybe if you want a big cake, double the amounts.

Great frosting is simply lemon juice with sugar. A LOT of sugar!
