I love acorn squash, but have been making it the same way every time-- so I tried something new!

Stuffed Acorn Squash!

Makes 2 servings. 1 hour cooking time.

Acorn squash
a bit of oil
1-2 apples (I used two small ones from the tree in our yard, and it was plenty), chopped
1/4-ish of an onion, chopped
Cumin (at your discretion!)

Preheat oven to 375. Cut squash in half (be careful, it's hard!) and scoop out seeds (you can keep these for toasting). Place cut-side down in a pan with about 1/2 inch of water in the bottom. Bake for 30 mins.
In a pan over medium heat, saut onion in oil. When slightly tender, add apples and walnuts. Stir, and add a splash of water to make things juicy. Add spices to taste. Continue to saut until everything is soft, juicy, and aromatic.
When you remove squash from oven, discard water. Turn cut-side up and fill squash with stuffing. Return to oven and bake for another 30 mins.
