So I made this awesome salad with roasted brussel sprouts, mushrooms, and fennel.  The greens were spinach, parsley, and fennel fronds, and the dressing is a balsamic honey dressing.  Then I sprinkled with toasted pine nuts.  It was SO good.  Even my brussel sprout hating boyfriend said "yum, I guess I like brussel sprouts". The only thing I would've done differently is to leave the fennel fronds out.  They tasted good but the texture was a little stringy.  Here's the pics:

I drizzled them in olive oil, sprinkled salt & pepper, and roasted them at 450 for about 15-20 minutes.  I don't remember exactly the time but until they got a little browned on the outside.  They're so good that way, way better than boiled in my opinion.

i want some!
i have never had brussels sprouts before but they look tasty in the picture.
i love to roast veggies in the oven with olive oil...
i have random cravings for them and roast some veggies we have in the fridge Cheesy
roasted zuchinni and squash is really yummy to!
