My friends came back from the Yucatan with a yummy new treat - panuchos! They are re-fried bean filled tortillas which are then fried up in oil and topped with more good things. On these, I have some more beans, lettuce, onions, avocado, baby lettuce, and cheddar cheese. I'm a vegetarian, but my friends add chicken as well.





Yum...
Oh, and the tortillas are made with "Maseca" brand flour.

Mmmm, I shouldn't have clicked on this post!  Tortillas, refried beans, avocados -- all tops on my list.  I had mexican food last night, so I must restrain myself and not try this one out until later this week.
