My wife makes this amazing Mediterranean dish by mixing boiled Lentils and bulger wheat with green onions, cherry tomatoes and feta cheese. The recipe originally came from the "Everyday Food" magazine. For me this is my goto dish as it is relatively easy to put together and tastes great every time...

I'll try to dig up the recipe we use.

sounds tasty! my favourite is zucchini pasta. Chop zucchini in cubes and pan-fry them with olive oil, salt and add fresh mint or basil, or both, and hot pepper powder. In the meantime cook your favourite pasta, adding 2 small fistful of salt (is how we do in italy, eventhough may sounds like it's a lot of salt), when is cooked throw it in the pan with the zucchini and stir it for a couple of minutes. Serve and add some fresh olive oil and parmesan!
