I came up with this yummy white bean dip today because I wanted something new to dip some raw veggies in.  The recipe is on my food blog but I'll post it here too:

Spicy White Bean Dip

Ingredients

1 - 16 oz can of navy beans, drained and rinsed
3 large cloves of garlic, peeled and pressed
1 jalapeno, stemmed (I dont take the seeds out but you can if you want a lot less spice)
1/4 cup cilantro
1 TB lemon juice
1/2 tsp. salt
a few grinds of fresh pepper

Instructions

Place all ingredients into a food processor and process until smooth.  Garnish with some choice sprigs of cilantro and serve with raw veggies of your choice.

I have to make this today... I have heaps and heaps of jalapenos (like 300+) from my garden and before they get sacrificed to breads and jellies and some cheesy bacon concoction my husband found online Sad I am totally making this.

Looks yummy.


My food processor was out so I tried it out. Quick, easy recipe! Grin I also added bell peppers cause I had these itty bitty ones from my garden that would not have gotten used otherwise. Also, I put a little bowl to the side with just the bell peppers in it, no chile, so my three year old could have some.

the_trademarks - wow, i couldn't even find enough uses to use up jalapenos from 3 plants. you have a ton! i just saw barefoot contessa on food network make a jalapeno cheddar corn bread in case you need another use for your peppers. =P

wow, i really loved this recipe! i almost ate a whole can of navy beans by myself, which is slightly disturbing. its amazingly rich and creamy without using sour cream, mayo, or any other fatty thickener. i used chives because i didn't have any cilantro, and it was great. next time i think i'll roast the garlic before putting it in for a different kind of flavor. thanks so much for this recipe, you really made me enjoy eating my veggies, haha~!

Yum! I love white bean dip.  The presentation is lovely, by the way Smiley   Slightly off-topic, but if you happen to have a ton of jalapenos, what my dad does is just slice them and stick them in a big jar of vinegar with oregano and garlic.  I don't think he uses salt, but he might.  They keep for a long time, but the seem to get hotter the longer you keep them.  Mmmm!

Tried it this weekend and it was deeeeeeeelish! Might cut down the garlic just a teeny bit next time but it was still very, very yummy!

 Cheesy  I do almost the same thing with back beans!  the only difference being I use lime juice instead of lemon, and I add in 1 tsp of cumin.

it's great as a spread on a tortilla topped with all manner of crunchy veggies and sprouts.

must try it with the white beans, though.

I made this Super Bowl Sunday, it was yummy. My Mom's way of telling me she liked it was buying more beans so I can make more! Lol. Thanks for sharing!
