Today was our parents' 29th anniversary, so my sister and I decided to make them a nice meal.  She cooked dinner and asked me to make dessert.  I have a tiny kitchen so I don't have a lot of baking supplies, so I was trying to think of something simple but still kind of impressive.  I ended up with these:

I used a cake mix, but I added a couple of big spoonfuls of chocolate chips I ground up in my magic bullet blender and some cocoa powder to make them more chocolaty.  I made them in my jumbo muffin tin, and I got 10 cupcakes.  They took about 35 mins at 325 to bake.

When they were still hot I used a plastic spoon (because they have thin, sharp edges) to scoop out the middle, and then I sprinkled some more pulverized chocolate in the hole so it would melt.  I put the cake insides in the freezer, because they'll be great for future parfaits.

Once they had cooled completely, I filled the holes almost to the top with cherry pie filling...

And then at the last possible minute I piped whipped cream on the tops, sprinkled them with even more chocolate, and finished with a cherry.  I think they turned out pretty cute, if I do say so myself, and everyone seemed to enjoy them.  At any rate, there were no leftovers, which I take as a success!

Those are definitely very awesome for a small kitchen last minute fancy dessert. Very pretty!

Crafty mind at it's best.  Looks and sounds Delicious.  I love the combonation of chocolate and cherries.
