My DH loves cheesecake so for our DIY wedding I made us a 4 layer (each layer 3 inches thick) New York style cheesecake topped by chocolate covered espresso beans! Hope you enjoy the pic as much as we enjoyed that cake!

That looks fantastic. Cheesecake is one of the hardest cakes to make into anything other than what it is... or decorate, or anything, and I think you did a fantastic job. Fabulous.

The secret to an un-smushed cheesecake is (drum roll please) -PVC pipe. I used 2 1/2 inch diameter pipe, 4 pieces for the bottom, which was a 16 in diameter cake. These support the EXTREME weight of the cake better than flimsy supports. I cut the pipe with a hand saw, sanded off the burrs, and then ran them through the dishwasher, they are reusable and make great molds other cooking projects!

Wow, thanks for sharing the pipe secret .... great idea!

I want to make one really badly, but I cant think of a reason for making a layered cake.  I'm sure I'll think of something eventually ... I'm going to dream of your wedding cake tonight!
