We did an odd thing this summer.  Child care is in short supply in our little city so, when my procrastinating husband and I finally got to looking around in May for someone to take care of our daughter, none was to be had.  So we did the only thing people in our situation do:  we enrolled our 6 year old in year-round private school for the summer semester.  Ah, we are clever.  Anyway, last day of private school was the day before she returned to public school so we celebrated by making her class these cupcakes.  Enough of my talking... on to the cupcakes!








These were so good and so simple.  I used a Duncan Hines butter recipe chocolate cake mix.  Then I piped in some whipped cream in the center, lightly dipped the tops of the cakes in chocolate almond bark, and then swirled on some cookie decorating icing.  They were a huge hit (ok, it's not hard to impress 6 year olds).
