Hello!

So my company is having a potluck tomorrow and the day after...why, who knows. But I thought of something for one potluck, but cannot think of something for the other. A lot of people have already signed up and it's looking like we are in desperate need of entrees as the only one so far is a quiche. The entree would have to be cold or able to be heated up in a microwave, as we don't have an oven.

Thanks!! I would have to make this tonight, so any suggestions would be much apprieciated!

How about a cold chicken salad?  My MIL does one with water chestnuts and peas that is pretty good.  Sorry I don't have the recipe.
