Im trying to make a Rorschach pillow/doll.  It it going to be from the shoulders up.  so i know i will put a collar and scarf on him and I can do his face but have no idea how to make his hat. any ideas?  i guess where I am stuck at it how to not make it look like a derby hat.  Im not sure how to shape it.  I dont know how to put the dimples in the hat.

Ahhh! Awesome! I'm making a whole group of watchmen dolls, but they'll be full body.
If the pillow is going to be flat, you could just use a few pieces of black felt as a shadow to make it appear that the hat is bent. Or, you could sort of make a dart on the inside of the hat before sewing it on.
