Apricot Baked Brie
Serves 6

Ingredients:
1 wheel of brie
1 puff pastry sheet
2 T apricot preserves
2 T honey
2 T brown sugar
6 golden apples

To prepare:
Pre-heat the oven to 350 degrees.  Slice brie horizontally, and spread apricot preserves between the two pieces, placing them back together.  Wrap the brie with the pastry sheet and place on a cookie tray in the oven for around 20-25 minutes until golden brown.  Spread honey and brown sugar on top and place back in the oven for another 5-10 minutes.  Cut into wedges and serve with apple slices.

I've also used dried fruit in the middle or other preserves, but I love the apricot the best.  The puff pastries come from a package, I can't quite remember the brand though.
