so tonight i did up some taco-y wraps. so yum

behold the homemade whole wheat tortillas, homemade salad filling (black beans, corn, pepper, cumin, lime etc. sooooo yum), and the homemade vegan sour cream. all from the lovins of my heart. it was so good too. i can give recipes if anyoone wants.

I'm not vegan, but I am trying to be healthy and that looks yummy AND healthy.  I am especially interested in the whole wheat tortillas.  Were they hard to make?

Oh!!  I loveeeeeeeeee making my own tortillas-- did you have a hard time rolling them thin enough/making sure they were cooked through?

rumpunzel & hp_nerd--the tortillas were actually super easy to make. the dough is really simple. rolling it out can be a little hard but this is the technique i used. flour a piece of parchment paper and roll the dough out on that. then, with the paper still attached, flip it onto your griddle. once it cooks though a little bit, the parchment paper will peel right off. this way you can get super thin tortillas.

the recipe for the salad was really easy.
1 can of black beans
1 can of corn
1 bell pepper
juice from half a lime
a handful of parsely or cilantro
a dash or two of cumin
salt n pep

sour cream
6 oz silken tofu
1 tbs lemon
1 tbs oil
salt to taste

whiz it in the food processor until smooth and creamy
