I can see it in my minds eye... and I've seen them for sale, but they just don't look very helpful... I think the pockets are too big, yadda yadda

SO... has anyone made one? Tips? Tricks? Recommendations?

Something like this?

Based on this one, I think you would make the organizer part and add straps at the top and bottom to attach it to the seat.  I would think you could use velcro on the straps so it is easy to put on and off and so it is adjustable.  It looks like they either have two loops at the bottom to attach to something on each side, or it is one loop that they might tuck down in the seat crease.  I guess that would depend upon your car.
Just my thoughts!  Post a picture once you create it!!

I've seen homemade ones made out of a tshirt.
Simplicity has 2 patterns...
2916 --this one looks like it has lots of options
3731 --basic

I've made one. O.N.E.  It was for a custom client, and that thing made me crazy.   I know I need to make one for my own car, but I'm so not motivated. LOL. 

I used rectangles for the backside, based on the size of the back of the seat.  then just some pleated pockets, some done with clear vinyl.  The top edges of the pockets had bias tape to give it a finished look. 

I'll see if I can dig up a photo.  But, all of this to say that I don't think you need a pattern to make yours.
