So the other day I got blintzes at village inn and they were awesome. Then I saw pre-made crepes at the grocery store a few days later and decided I could make my own blintzes. But then when I went back to the store I couldn't find the crepes again, so my boyfriend suggested we make our own (this is why I love him!) It went way better than expected, and I actually did the fancy flippy thing one time, woo hoo!

All in all it was an awesome way to spend a morning. Definitely time consuming, but worth it if you ask me.

I love crepes with peaches. Not the canned ones - ish!! This here's a brilliant crepe recipe by Rose Berenbaum; I don't really use any other, and they're perfect every time:

3 eggs
1 cup milk
1 tsp vanilla
3 tbsp melted unsalted butter
1 tbsp Grand Marnier
3/4 cup cornstarch
1/8 tsp salt
1 tbsp sugar

Whirl around in a blender.

Wow, that recipe sounds amazing! The one I used didn't call for any vanilla or anything, which I thought was odd. I will have to try yours next time, thanks!

i like blintzes with fruit, not with lamb's meat, though, like they're always served in eastern europe.  (if it were beef or chicken, i'd probably be ok with it.  i just don't like lamb)

i also like making blini, tiny blintzes!  they're great with a dab of whipped cream and a slice of strawberry.
