So I have ceiliacs disease, and therefore cannot eat gluten... problem is most of the gluten-free stuff stinks! Today I decided to try to modify a gluten-free pancake mix from the store and got a bit food-coloring happy...

basically, they taste amazing! All I did was add some vanilla extract and about a 1/2 cup of brown sugar baking splenda...oh, and some major amounts of food coloring...
since my mom hijacked my camera after my wedding shower last weekend, I had to use the camera on my phone (uggg)... so what you cant tell is that the colors are REALLY bright on the pancakes!

Those are awesome! I always make pancakes with my nephews, will have to let them squirt in some food coloring, they would love it! Glad you were able to make them taste better and look fun!

These are so cute! My boyfriend's sister has recently been diagnosed-I will add this to my list of exciting things she can still have. Who could fail to be cheered up by such colours?

looks fun. i do gluten free for me and one of my sons.
we will have to give it a go.
I make up my own batter mix, i dont like the premade stuff either,
have you tried the little donut making machines, we make those too similar to pancake recipe just thicker.

I always put sprinkles in my pancakes so they end up looking like funfetti cake Cheesy I'm gonna have to try adding food coloring!

What would you attempt to do if you knew you could not fail?

This looks like a great idea (In keeping with the rainbow cheesecake and cupcakes)  I may use this for sweet blinches.(sorry sp)

Hah! Rainbow cupcakes were new to me a couple weeks ago, and now rainbow pancakes! I love it! They look so fun ^_^
