My husband and I had some friends over for a Cinco de mayo celebration (that we actually had on the 4th since everyone would be working on monday), I had been wanting a reason to make some Margarita cupcakes with Lime Glaze (using the recipe in "Cupcakes Galore"), so I whipped up a batch.  The were SO good, I will definitely be making them again.
And look how pretty they turned out... mmm....




For my husband's birthday he wanted a Red Velvet cake ("with buttercream, not cream cheese, frosting" he told me), so I got my Grandma's recipe from my dad (well he got it from his sister for me) (my grandmother died of cancer when I was in elementary school, but she was well known in for her homemade cakes) and tried to figure out the cryptic recipe.  I must have gotten it right though, since it was delicious, even if everything in my kitchen including myself and my son ended up red.  My husband did not want to share any of it (we normally end up with half a cake leftover since we can never eat a whole cake, this one was gone the next night) he said it was so good, haha.

That's the book that I got the recipe out of.

And yes they do have alcohol in them, tequila in both the cupcake batter and the lime glaze, so my 2 yr old wasn't allowed to have any (he was very upset until I gave him an ice cream cone).

When I saw the pic, I thought it was the Nickelodeon slime cakes. Now I know what I'm making for my son's 2nd bday in August. (the slime cake, not the tequila one, Smiley ) I love red velvet cake so much, yours looks so good! I never get any bc my husband doesn't like it and I can't eat a whole cake by myself. (well, I shouldn't)

Originally it was the type of cocoa used that gave red velvet its reddish appearance...
