Tonight I made cupcakes from Isa's Vegan Cupcakes Take Over the World...I used the basic golden cupcake recipe with minor adjustments and the vanilla buttercream frosting. I piped it on with a frosting piper I got from Target.  I've been watching the Eurovision Song Contest and it felt like a cupcake night. Just thought I'd share a pic.

Oh, and Totoro helped. Wink

They are nummy! I liked Iceland and Denmark...though the winning song (no spoilers  Wink ) wasn't bad.

The icing is pretty thick as is, so it holds up well. It's from Isa's recipe in her cupcake book and I tend to use it on everything from cupcakes to cookies-it's super sweet and looks great. And on the cupcake in the picture I just piled it on! I used a piper from a kit from Target-it was my first time using it but it was really easy. I guess my tip for making fluffy frosting is to beat it for at least 5 minutes. I have a hand mixer I really like and I use it on setting 2 (medium). Oh and another tip is that I make the icing while the cupcakes are baking, wait for the cupcakes to cool completely (around 30 min) and while they are cooling on the counter I put the frosting in the fridge which makes it more solid and easier to make 'tall' when I am ready to frost. Plus I only frost the cupcakes that are going to get eaten at that moment and keep the frosting in the fridge until they are gone. If they all get frosted and sit for a week they lose their visual appeal and flavor.

And now that it's been another day and the whole of Europe knows by now-go Russia! Congrats.
