This is not your average afternoon tea 'meal'.  It's far from light...quite heavy I must say.  It is a typical Filipino snack.  Try it, you'll love it!



Rice Porridge with Corn (Guinataang Mais)

Ingredients:
1 cup glutinous rice
1 can coconut cream (approx 2 cups)
3 cups water
3/4 cup white sugar
1/2 teaspoon salt
1 425 can sweet corn kernels

Procedure:
In a medium saucepan, combine rice, coconut cream and water. Bring to a boil, then mix in sugar and salt. Simmer until rice is soft and mixture is thick. Mix once in a while to prevent rice from sticking to the bottom of the pan. Pour in contents of corn kernel can, including the liquid. Mix and return to boiling. Simmer for an additional minute.

Serve while hot. Enjoy!

This is really interesting, and I definitely want to give it a shot. But I have a question. I am not a huge fan of corn, are there other things that typically get put into this dish aside from corn?

My mama used to make this for me when I was little, but without the corn.  I haven't had it in soooo long!  Have you ever had a chocolate version of this (again, without the corn)?  I remember her making that, too.  Yum!

The one with chocolate is similar but does not have coconut milk.  And it's usually served for breakfast.  My kids love that too.  Roll Eyes

Oooh there is a chocolate version.. MMMM, that sounds yummy yummy.. I am definitely going to have to get some coconut milk so I can give this a shot. I always love to try new recipes.
