Lemongrass is a plant native of India and the tropical regions of the Old World. It is widely used in Asian cooking, particularly in Thailand, Laos, Sri Lanka and also in Caribbean cuisine. It has a flavour and aroma similar to lemon, can be dried, powdered, or used fresh.

Thai Lemongrass Chicken



1 whole chicken
1 stalk lemon grass
4 cloves garlic
2 tsp ginger, grated or powdered
can of coconut milk
3 tsp soy sauce
1 tsp salt
* The original recipe called for 2 tbsp fish sauce but I do not like the smell and taste of fish sauce, so I left it out.

2 lemons(1 green and 1 yellow) and fresh cilantro leaves for decoration

Wash and dry chicken
Grind stalk lemon grass, coconut milk, the garlic, ginger and soy sauce in a food processor (or blender), add salt, this will be the marinade.
Place chicken in a baking dish and pour the marinade, using your hands, make sure the chicken is well coated with the marinade.
Reserve cup of marinade.


Refrigerate for 2 -3 hours ( hour minimum).
When the chicken has marinated, add cup of water mixed with reserved marinade to the dish.
Place it in the oven to 350 degrees F.
Bake the chicken for 1 hour covered with foil
Cook the chicken uncovered for 1 hour.
In the last hour, using a spoon, take juice from the bottom of the baking dish and pour over chicken.

Serve with white rice

I love the flavor of lemongrass but have only ever cooked with it when making Asian inspired soups. I'm so happy to have another idea for it now Smiley. This chicken looks amazing and I'm sure it tastes just as good! Yummmm!

Mmmm, I have a favorite recipe that is pretty much the exact same thing as this, except with jalapenos instead of lemongrass! I will definitely have to try this one soon! I'm wondering whether it could be made with just the chicken breasts, as I am not the biggest fan of eating chicken with bones still in it haha?

This recipe sounds delicious.  Smiley  I'll defiantly keep an eye our for Lemongrass at the store so I can try this.  Thanks for the recipe!

You can use any kind of chicken you like. You'll want to make sure you use about the same amount.

Personally, I make something similar to this and use both hot chilli peppers as well as the lemongrass. We love it. Smiley

A new Asian market just opened a block from me and after visiting them today I was looking for a recipe for the lemongrass I bought.

This recipe sounds delicious and your photos look wonderful. I just wish I had some chicken. It'll have to wait a couple days. If it turns out half as good as yours looks my family should love it. I'll probably do half the batch from boneless breast since my girls prefer no bones too. I think leg quarters are perfect for this recipe myself.
