It's just like making regular mash potatoes!
1. Boil purple potatoes. Peel and mash.
2. Carmelize some onions in oil. Chop up some fresh dill.
3. While onion is carmelizing, mix milk into the potatoes to the consistency you like. You can add a dab of butter too.
4. Mix potatoes, onions and dill. Salt and pepper to taste.

Enjoy!

Wow, I don't think I've ever seen potatoes that purple before!  With the garnish, it kind of looks like a brain coral with some seaweed (in a good way).  I wonder if anywhere around here has purple potatoes....   

Do you happen to know if they have different nutritional value than plain old white potatoes?

wow those are so colorful! do they taste the same as regular potatoes? I'm working with some tomorrow, do they stain your hands? yummy! i wonder if kids will like it.

Yes. purple potatoes are more nutritious than the plain ol' white potatoes. the pigments in the purple have nutrients in them Smiley

Yeah, I like them because they're purdy Wink I think the nutritional content is similar. You must eat the peel to get all your nutrients though. Otherwise, it's just starch. It doesn't stain your hands, but it stains your fingernails a little bit when you peel them.
STAINS CLOTHES!!!

If you want to buy them, this is a good time of year (early spring). Try your local farmer's market or Latino foods store.

I always wondered if they really mashed purple. Now I gotta get some and feed em to my kid. He loves to try unusual vegies.

In Sweden those purple potatoes are called Bl Kongo, which would be Blue Congo in English.  Smiley
