We're having a very small wedding to begin with (just family and close friends) and our reception is going to be very informal. We're not having a DJ, no dance floor, no bouquet/garter throwing, no first dances, etc. There will still be food, drinks, cake. Since all of my fiance's family is coming in from out of town and we rarely get to see them, we wanted it to be more like we're "hanging out" with them.. if that makes sense.

I want to stress that it will be casual but I'm having trouble figuring out how to word it. Any ideas?

You don't need to go to extra lengths to specify it's casual.  It should be apparent from the time of day of your wedding, the style of invitation, and other visual cues.

Just word it something to the effect of..

'Come hang-out with us at out no frills reception'
or
'Kick back & relax with us at our no frills reception'

Time, Date, Place, etc

Refreshments will be provided

Just word it casually & they will get the idea it is casual.

The style of invitation will set the tone, but you could do something like
"Boy met Girl.
For the rest of the story,
join us on
DATE
at TIME
LOCATION
ADDRESS
CITY, STATE
when BRIDE
and GROOM
will be pronounced husband and wife"
I got that from http://www.paperandmore.com/articles/wording_verses/wedding/casual_1.html Just go to whatever search engine you like (google, yahoo, whatever) and type in "casual wedding invitation wording" and they'll offer you lots of choices
