I'm thinking of making a simple version of those laptop desks, but I don't have any ideas of what I could make it out of. Any suggestions?

Someone here on Craftster used the lid to a plastic tote, and old blue jeans.She uses it to craft on when on the couch; the raised edge keep supplies from rolling away. Maybe buy a cheap serving tray, and make and glue on a pillow underneath it? Hot glue, or e6000,probably,and you could glue a row of trim/cord/ribbon over the glue if it was visible.
I'm also picturing something like a big book, or 3 ring binder,made as a box. Cut a square out of a foam pillow to insert it. Flat surface to write on,pillow under to be comfy to use,and it'd hold pens,paper,ect.Never made one like that-or seen one-but I can picture it. It'd need a rim-maybe glue braided cord around the edge-to keep pens and beads from rolling away.

Oooh, I've been wondering the same thing, my laptop always gets too hot and shuts off at the most inconvenient times.
