I was watching a Food Network cake challenge and Debbie of
http://www.debbiedoescakes.net/ was talking about her sushi cupcakes, so I checked out her creations and some other creations:

The original ideas use green fruit by the foot but I use green cupcake wrappers. I tried using the green fruit by the foot but there were several problems:
1) I live in 3 different states and it was impossible for me to find a box of only green fruit by the foot. I found tattoo, tie dye, multicolors... I ended up finding a box of plain green with plain red, yellow and blue. And spent a month eating the red, yellow and blue... ick (I'm not a fan of fruit by the foot)
2) When you take the cupcake and try to wrap the fruit by the foot around it, it can just slink off and then you have this lump of crumb covered green at the bottom of your cupcake
3) When you put them in the fridge, the fruit by the foot gets very soggy and falls apart
4) When you're trying to eat it your fingers get covered by this nasty green goop and all you taste is that and not cupcake
For toppings it depends what I have in my kitchen. I've used different gummy fish, mini Swedish fish and put 2 or 3 on the top, different types of gummy worms, those sour straw things, marzipan, peach rings. Its fun because you can experiment with whatever you want for the toppings.
And I make them small cuz regular sized cupcakes looked disproportionate. And I could only fit 4 in a box and they looked squished and sad and not as realistic as the minis.
