I love butternut squash.   I make a curry version so I am excited to try the golden version.  :-)

I tried this recipe but it came out very, very thin.  I added a can of pumpkin, but it's still pretty watery.  What I tried tasted really great, though, so it's on the stove simmering a little longer to hopefully get it to thicken up.  I'll definitely try it again but maybe only 3 or 4 cups of water instead of 6.  Thanks for sharing this with us!

Perhaps your squash was smaller than the one I used?  I didn't weigh it, but it was on the larger side.  That would explain it being too thin.

maybe you could add a little flour or cornstarch to it to try to get it to thicken up too....
