I've been spending a lot of time cooking the last few weekends.

Last week I got out the pasta machine and rolled out some spinach, tomato and mushroom pasta. It was a pasta making extravaganza.  I also did some of my most delicious ravioli I've ever made with ricotta, mozzarella, porcini mushroom and spinach.  I boiled them then tossed them with butter and garlic, frying them a little for a little bit of crisp.  I also tossed part of the other pasta (tagliatelle)  with butter and garlic and made a sauce for the other part out of the leftover ricotta mixture that i used for the ravioli.  mamma mia, ho fatto bene!

A couple of weeks ago I made some awesome risotto that seriously took 2 hours of stirring to come out perfectly creamy and yummy.  I used broccoli and mushrooms

Tonight I made some AWESOME Italian sausage rolls with mushroom, spinach, mozzarella and lots of garlic.

Aren't they lovely?  Grin

That looks *fabulous*!! I love ravioli and risotto. Haven't yet tried sausage rolls...yours look delish!

My hubby is the chef at our house. I just read your post to him...he kept saying "yep" "sounds right" and then "ohhhh, I'll have to try that!" about the frying for a little bit of crisp. ohhhh boy am I hungry!

The pasta looks delicious! And you used several of my favourite ingredients, yay! I just had breakfast but if I hade that plate of Ravioli here I'd totally eat it for second breakfast.
 For some reason I really have a hard time trying to eat rice (I'm kind of happy I wasn't born in som rice-eating country like Japan or China Grin).
Sausage rolls are great, and those look very yummy!

Wow, that all looks really delicious.

Did you actually make the risotto, or just the sauce - if so how do you make risotto?
