So dinner tonight was this really yummy salad, so I thought I'd share..
Sorry I don't have much of a recipe, but measuring stuff is not really my style, plus it was basically improvised.
Here goes:Salmon Avocado Salad with ginger lime dressing
Salmon fillets (we used four because there were four of us)
Fry the fillets in a bit of olive oil until cooked all the way through, let cool for a bit, then flake into large-ish chunks.
Chop red peppers, avocados, cucumber, scallions, and cherry tomatoes (well you don't have to chop the tomatoes but they fit in the list:)
Tear lettuce leaves into bowl (I think it would have been better with spinach, but we had lettuce on hand). Top with veggies and salmon chunks.Dressing
Whisk together soy sauce, sesame oil, vinegar (any kind will do), lime juice, chili paste, chopped garlic and grated ginger. Pour over salad just before serving.
Now onto the beauteousness...
