Oh My Goodness these are so much better than I thought they would be! Absolutely delish! I can post the recipe if anyones interested. They are apricot macaroons dipped in chocolate.

Chocolate Apricot Macaroons

2 cups sweetened flaked coconut
1 cup dried apricots - chopped
2/3 cup sweetened condensed milk
1/8 tsp salt

*Chop the apricots in a food processor. I'd call it minced really because they should be really small.*

Preheat oven to 350. Mix the coconut, apricots, condensed milk and salt. Spoon the mix onto an greased cookie sheet. I like to press them a little flat but either way works. Bake them for 12 - 14 minutes. I found they stick if you don't lift them with a spatula right away.

Chocolate Dip
 1 cup chocolate chips
 Splash of milk
double boiler (ie a small pot of water with a small pyrex bowl on top)

melt the chocolate chips, as it starts to melt stir stir stir and add a small splash of milk and continue to stir. Once its all melted with no lumps and a nice shiny sheen to it dip each macaroon half way into the chocolate.

They are VERY tasty!

... my husband just reminded me that I had a lot of chocolate dip left over... half a cup chips might be better after all if you don't like to dip your fingers in chocolate afterwards Tongue


Also if you don't want a strong apricot taste you can use a little less apricot and a little more coconut. It's pretty versatile like that.
