You could try a fruit terrine, perhaps? Basically that means you use an unflavored gelatin (or agar agar I'm sure would work) and use juice and pack it full of various fruits (think fruit in jello, but this is more jello than fruit). What about some sort of muffin? If you can find a raspberry muffin recipe I'm sure these would substitute deliciously.
