Ok, so I have done lots of tie dyeing using procion dyes from Dharma.  And dying protien fibers with Koolaid.
But now I want to try dying some towels and I was wondering what method would be the best to get the desired effect.  They are white cotton towels.  I mistakenly thought that by buying all white towels I could keep them bright and matching by bleaching them.  Not so.  Something with our hard water just makes them always look dingy.  So I am switching my plan to off-white towels.  I want them to resemble "unbleached" cotton.  I though about dying with tea or coffee or just picking up some Rit in Ivory.

What do you guys think?

I'm not a big fan of tea/coffee - and I wouldn't call the results off-white (more like pink or "stain" haha).  I've had good results with optic white fabric using 'ecru' dye, which tends toward a creamy offwhite. Not sure how well RIT Ivory does, but there are procion dyes for both 'ecru' and 'ivory' (the ecru is more of a brown hue, ivory more yellow?).
