What happens when you fall in love?
With... cupcake liners... See, guys, I really planned on saving these for a Rainy Day, and then running around and giving them away.
Instead, I tried to ignore the fact that our kitchen is being renovated, broke out the Kitchen-Aid, and made SUPERMAN cupcakes. Pretty simple, actually.
Yellow cake with gel-colored frosting. I was too lazy to make Swiss Meringue Buttercream, so I found a half-container full of premade frosting, then added about a cup of powdered sugar, a BUNCH of vanilla, and a lot of milk, until I got what I wanted, and it didn't taste like the sugar was burning me. not bad, actually. Not swiss meringue butter cream, but, hey.
The yellow cupcakes, I was wary about. You didn't beat, then add something, then beat, then add in flour in parts... you poured everything in, then mixed. SO SIMPLE. And... the best yellow cake I've ever made- really.
Best Yellow Cupcakes2 1/2 cups all-purpose flour
1 1/2 cups sugar
1/2 cup shortening
1 1/4 cups milk
3 /12 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 large eggs
heat oven to 350. Line two cupcake pans (or grease one 13x9, two 8x8, two 9x9s). place all ingrediants, in order, in bowl/electric mixer. Mix on low for thirty seconds, then on high for three minutes. Place about a 1/4 cup in each cupcake paper. bake for about 25 minutes or until done. Allow to cool, and frost. I did mine with a piping bag and Wilton Star tip.

The red was a bit redder, but I sort of.. decided it'd be pink-y, because.. honestly, I'd die if I had that much red food dye, to achieve true red.
Also, if you're all 'No, I don't need three eggs", then... well, they are better with three eggs, but, also, if you want yellow cake, add a drop or so of yellow food dye.
They were delicious, my book club loved them. And I love Superman.
