On my last trip to the states I bought wrappers for Vietnamese Spring Rolls.  I found a few recipes on line but I thought I'd see what my fellow chef-y craftsters like to do with theirs.

pretty simple but i usually boil some noodles, adding lettuce and roasted shrimp

I like shredding red cabbage, carrots and cucumbers together and adding mint and cilantro.

i like spring rolls with  rice noodles, bean sprouts,mint and shrimp.  dipping it in hoison sauce with crushed peanuts is delicious!

Spring roll wrappers are like flour tortillas: anything goes.

We usually eat them with rice noodles, boiled shrimp, thinly sliced pork, whatever greens and salads you like, and a Vietnamese style fish sauce, nuoc cham.
The sauce might take a bit to get used to and can be extremely pungent to those unfamiliar with it. But you can always tweak it to taste. My mom usually uses a bit more garlic and replaces the vinegar with some coconut flavored soda and pickled leeks.

And if you can get your hands on some Chinese sausage: boil that up and slice widthwise into disks ~1/2" to 3/4" thick. fry up some eggs and cut into strips. Add rice noodles, boiled bean sprouts, some leafy greens and dip in hoison sauce with crushed (roasted) peanuts. Not exactly healthy, but a good snack.
