today i babysat 2 of my little cousins...so what should we do? make christmas cookies!!!!!
then the kiddies watched grinch while i made chocolate biscotti with peppermint white chocolate chips and holiday biscotti with orange zest, pistatios and craisins!!!!
i also made peppermint bark but my cell died and that's the only camara i have right now!
Today was a fun day!!!!







Holiday Biscotti
INGREDIENTS:
1/2 cup butter or margarine,
softened
1 cup sugar
3 eggs
2 teaspoons vanilla extract
1 teaspoon orange extract
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup dried cranberries,
coarsley chopped
2/3 cup pistachios, coarsely
chopped
2 tablespoons grated orange peel
DIRECTIONS:
1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time,
beating well after each addition. Stir in extracts. Combine flour, baking
powder and salt; gradually add to creamed mixture and mix well (dough
will be sticky). Stir in cranberries, pistachios and orange peel. Chill for 30
minutes.
2. Divide dough in half. On a floured surface, shape each half into a loaf
1-1/2 to 2-in. diameter. Place on an ungreased baking sheet. Bake at
350 degrees F for 30-35 minutes.
3. Cool for 5 minutes. Cut diagonally into 3/4-in. thick slices. Place slices,
cut side down, on an ungreased baking sheet. Bake for 9-10 minutes.
Turn slices over. Bake 10 minutes more or until golden brown. Cool on
wire rack. Store in an airtight container.
Chocolate peppermint biscotti
INGREDIENTS:
• 5 cups flour
• 1 1/2 cups cocoa powder
• 2 tbs baking powder
• 1 cup butter
• 2 cups sugar
• 6 eggs
• 1 tbs vanilla extract
• 2tsp peppermint extract
• 2 cups chocolate chips (I used these peppermint white choc thingies I found at world market)
PREPARATION:
Preheat oven to 400F. Cream sugar and butter. Beat in eggs, one at a time, until smooth and add vanilla extract. Sift together the dry ingredients and add to the egg mixture. Stir in chocolate chips.
Shape the dough into 6 longs loaves and brush with beaten egg yolk. Bake for 25 minutes. Remove from oven and let cool completely. Cut each loaf into 1 inch slices and place back on baking sheet. Reduce heat to 350F and place slices back into the oven. Bake for another 10 minutes, then remove from the oven and cool.
