I LOVE shortbread... it's one of the simplest, most basic cookie recipes, but the perfect mix of three ingredients (butter, sugar, and flour) yield the most melt-in-your-mouth-delicious cookies.

I like to dress mine up. Above, I have dipped my shortbread into melted chocolate and sprinkled with sliced almonds.

Here, I shaped the cookies by flattening balls of dough. Then, after they were baked, but while they were still warm, I melted Andes mints between two of them to make a sandwich. So delicious. Reminds me a little bit of Milano cookies, too.



What are your favorite things to do with shortbread?

The Andes mint ones are sooooo good... those were for my step-mother on her birthday. She LOVED them.

Dulce de leche sounds really delicious too.

I tend to add cinnamon & nutmeg to basic shortbread dough, maybe a bit of allspice...powdered sugar on top.

I also make them a bit smaller or thinner,& bake at a slightly higher tempurature in the oven.
Why? higher temp makes them so they will hold stuff in those nooks'n crannies,but will not fall apart when dipped into your bitter black tea with milk.


There have been discussions at my house how the moon should be made out of shortbread if it was a cookie instead of cheese.
Shortbread is god.

The chocolate and almond shortbread cookies look really yummy!  They're very pretty too.  I add cinnamon to my basic shortbread, plus toasted pecans and/or sesame seeds. Toasted sesame seeds are a surprisingly good addition.
