Thanks everyone for the great recipes!  I printed out a bunch that I plan to try and if they turn out well, take with me to Christmas Eve with my family.  I'm intrigued by the Velveeta fudge, but I'm not sure if I'm gonna try that one... Tongue

I received my cookies from caitlinlovesyou!  Thanks!  That was the best packing job I've ever seen.  I can't wait to rip into them for dessert tonight.

Busy Day Chocolate Cookies
2 cups sugar
1 stick butter
1/4 t. salt
1/2 cup milk
1/4 cup cocoa
1/2 cup peanut butter
3 1/2 cups oatmeal
1 t. vanilla

Measure sugar, butter, salt, milk and cocoa into a large saucepan.  Stir until sugar is dissolved over medium heat.  Bring to a rolling boil, stirring occasionally.  Remove from heat.  Stir in peanut butter, vanilla and oatmeal, mix well.  Drop by spoonfuls onto wax paper.  Cool completely and enjoy!


Fantasy Fudge
3 cups sugar
1 1/2 sticks butter
2/3 cup evaporated milk
1  1/2 pkg. Baker's Semi-Sweet Baking Chocolate, chopped
1 jar (7 oz.) Jet-Puffed Marshmellow Creme
1 cup chopped walnuts (optional)
1 t. vanilla

Line 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside.  Place sugar, butter, evaporated milk in large, heavy sauce pan.  Bring to a full rolling boil on medium heat, stirring constantly.  Boil 4 minutes or until candy thermometer reaches 234 degrees.  Remove from heat.  Add chocolate and marshmellow creme; stir until completely melted.  Add walnuts and vanilla; mix well.  Pour immediately into prepared pan; spread to form an even layer.  Let stand at room temperature until completely cooled (about 4 hours).

Peanut Butter Bonbons
1/2 cup butter
1/2 cup crunchy peanut butter
3/4 cup packed brown sugar
1/4 t. baking soda
1 egg
1 1/2 t. vanilla extract
2 1/2 cups flour
2 cups semi-sweet chocolate, chopped
2 t. solid vegetable shortening

In a large mixing bowl beat the butter and peanut butter with an electric mixer on high for 30 seconds.  Add the brown sugar and baking soda; beat until combined.  Beat in egg and vanilla.  Beat in as much of the flour and you can with the mixer.  Stir in any remaing flour with a wooden spoon.  Shape dough into 1-inch balls.  Place balls 1 1/2 inches apart on ungreased sheets.  Bake in preheated 350 degree oven, or until cookies are set and lightly browned on the bottom.  Remove cookies and cool on rack.  In medium saucepan, heat chocolate and shortening over low heat till melted.  Cool slightly.  Using a fork, dip peanut butter balls, one at a time, into chocolate mixture to coat.  Transfer to waced paper-lined baking sheets.  Chill till firm.


Peanut Butter Cookies
1 cup sugar
1 egg
1 cup peanut butter

Preheat oven to 400 degrees.  Combine ingredients and mix well.  Roll into 1-inch balls.  Place on an ungreased cookie pan.  Press iwth back of a fork.  Press again in the opposite direction to make criss-cross marks.  Bake for 8-10 minutes.

Look at all the gobs of ooey gooey cookies Grin There's a nice variety, and I think my favorite are the ginger snaps covered in chocolate (see the half eaten cookie in the middle Cheesy).
