Will all 100% cotton shrink when I'm finished knitting?

some shrink, some expand.
Knit up a swatch, measure it, then wash it as you would the finished object, and remeasure.
It's the only way to be sure.

also remember that cotton yarn doesnt tend to hold cables, ribbing, etc very well-- its stretches out!
