Lately I've been using mashed up over-ripe bananas in my baking instead of butter, as I love them and am sure it can only be a good thing to get some fruit into my otherwise unhealthy recipes Cheesy

Yesterday I made chocolate chip cake with bananas instead of butter and a banana and chocolate topping. If anyone's interested here are the quantities I used, shoould have got a photo but it was gobbled up by my appreciative family!

200g light brown sugar
2 large eggs
2 mashed up over-ripe bananas
200g sieved self raising flour
25g sieved cocoa powder


Mix all the above, then break a 100g bar of chocolate into chunks and stir in. Pour thinly into a greased and lined baking tray and bake for 20mins at 175'C.

When cool, cut into squares and top with this mixture:

200g chocolate, broken into squares and melted in a bowl over a pan of boiling water + 1 mashed up over-ripe banana.
