I really want to try making fudge, but all the recipes I've tried don't really work (not that I've tried too much, he he). Does anyone know a good recipe?

i got this recipe from the back of a peanut butter jar.. and it's soooooooooo yummy and really easy!*but definately not diet food!*

you need
400g sweetened condensed milk
375g packet chocolate melts
1/4 cup crunchy peanut butter
1/2 cup chopped peanuts

1. combine condensed milk & chocolate melts in a saucepan, stir over low heat until chocolate melts.
2. stir in peanut butter & chopped nuts
3. pour into a lined 28cmx18cm slab tiin & refrigerate until set
4. when set, cut into squares

i've tried one that was vanilla caramel fudge, and it didn't work at all.. i ended up burning myself, and the fudge - not pretty!!

i posted this in another thread, but eh.  here it is again.  make this...you definitely won't regret it.  ever:

i have the easiest fudge recipe probably ever right here.  it is also vegan, and delicious.

3 1/2 cups confectioner's sugar
1/2 cup sifted cocoa powder
1/4 cup vanilla soy milk
1 tsp vanilla extract
6 tbsp margarine

use some of the margarine to grease whatever pan you want to use for the fudge.  i usually use a loaf pan or an 8x8 square pan.
put all the ingredients into a bowl, and put a saucepan with some water on, and simmer the water.
put bowl on top, and stir untill everything is melted.
or use a double boiler.
then, pour into the pan, and chill.
it's just that easy.

plus, you can add some peanut butter, or nuts, or whatever to make it a different flavour.  i get endless complements for this dish, and it's just so easy.

i have an oldschool recipe that involves chocolate squares, sugar, corn syrup, milk, salt and margarine.
does anybody know if dry (reconstituted) milk works as well as whole milk?
i know fudge can be picky...

another thing- i just wanted to let you know that fudge is pretty picky.  it works best if you:

1. make sure all of the sugar crystals are wiped off of the side of the pan (you can use a paper towel- careful not to burn yourself!)

2. simmer the fudge at a slight rolling boil until it reaches soft ball stage.  this is where you drop a teaspoon of the liquid fudge into cool water & you can shape the fudge into a ball inside the water, but when you lift the fudge ball out of the water it starts to fall apart.

3. once at soft ball stage remove from heat & let cool to room temperature.

4.  then you have to beat the fudge with a wooden spoon until it loses its gloss & becomes thick & creamy (does anybody know if you can use an electric mixer for this stage- it takes forever & hurts my wrists)

5. now your fudge is ready to set in the fridge!  (be sure to cut it into squares before refrigeration to make it easier & prettier)

I don't know if this is going to be helpful or if you've already tried this recipe, but I always just use the one on the back of the marshmallow fluff jar (lots of surage, butter, condensed milk, vanilla, and chocoalte chips). 
I've been using it for years, it's the same on my grandma used. I do find that the fudge is kinda wet.  I stick it in the fridge, then I cut it and let it dry out a bit.

Thanks for that recipe veganpunk. I brought a batch to my family for Xmas and they all dug in... instead of the plain cocoa powder I used a vegan Ghiradelli mocha cocoa so it had a coffee flavor to it. I'm vegan and have tried a few fudge recipes in the past but this was the only one that worked. Thanks Smiley

We have jsut made the Peanut butter fudge, (on a mission to use the 60 something jars of penut butter i must have)  and it is BEAUTIFUL!  It tastes abit like snickers but melts in the mouth...mmmmm rather moreish, cardiac arrest in a pan though Cheesy:D

If at first you don't suceed, cheat...then repeat until caught...then lie.
