I had bananas and cottage cheese that had no purpose in life; now they do.



Everyone seems to like em...

Cottage Cheese Banana Muffins

Makes 24 muffins

Combine and mix the following in a large bowl:

2 C flour
1 C whole wheat pastry flour
1 tsp salt
2 tsp baking powder
tsp ground cinnamon
1/8 tsp (or less) fresh ground nutmeg
1 C sugar
1 C instant nonfat dry milk (may be omitted)

In a food processor or blender combine the following:

3 medium bananas (about 2 cups)
C vegetable oil
3 eggs
1 C low fat cottage cheese
C water
1 tsp vanilla

Blend or process until smooth, then add to the dry ingredients and mix well. Split evenly between 2 well-greased muffin pans and bake @ 350F for 16 to 18 minutes or until done in the center.

Nice idea!

A friend introduced me to the idea of adding cottage cheese to pancake batter- just stirred right in.  It's good.  The little cottage cheese bits melt and string just like cheese

Oooh that does sound good in pancakes.  I bet it would be good the same way in corn muffins or dinner rolls.  I like to use cottage cheese a lot since it's high in protein, but really low in fat and calories.
