That's pretty!

Last time I tried making one of those, I was using yards of fabric.  Thing is, my strips of fabric ended up being pretty short with a lot of knots in it.  Do you have any suggestions for not having a so much knots?

Use a big piece of fabric and cut it into one continuous strip.

How many sheets would I need (approx)? I have 2 queen size sheets at the moment. Is this the correct way to cut?

How big do you want the rug?  you are going to need more than 2 queen sheets to achieve a rug the size of mine.  Probably at least 1-2 more. You can always just see how it goes ...and start out w/the 2 you have and keep adding.  that's what I love about this project.
