I just made this baby hat--it's just knitting and purling a rectangle, but in a clever way, so you get good payoff for low skill! http://www.straw.com/cpy/patterns/baby_pixiehat.html
(there's also a link on that page for a version made with fingering weight yarn)

...and here's my version:

ha!!! I should yell at them...they're all so eager, just a little lame. a few of them are daring to (gasp) join. if they want ugly seams, whatever.

HERe's a link to Martha's pattern--it was the first hat I made, and I was satisfied with it. It knits up quickly if you use Jiffy Thick n Quick.

This pattern is supposedly similar to the legendary "one hour hat," that I've never seen. There used to be a thread about that one Completed Projects. Lots of FO pics .

You should make them all make a Jayne hat. That was the first thing I ever knit. I used this pattern:

http://home.uplink.net/~maburns/id11.html

It's written for knitting in the round, but if you just ignore that one line that says "join" you could knit it in the flat and seam at the end.
