I LOVE LOVE LOVE Crepes 
... so  afew weeks a go I made pear & cottage cheese creaps for my neice & nephew... my 6 yr old Neice says with a huge mouth full, her seond helping .... "These are "a-lisious" .... but why do you call them crap??!" I almost fell over.

thanks for this recipe!! it was wonderful and most importantly, super EASY!!! i made some tonite for dessert.

I made mine with apple, blueberry and strawberry pie filling and whip cream topping:

your recipe sounds great and your pic is awesome (are those your crepes? wow).  i'm so curious where you got this recipe from.  you know i lived in france for awhile and they are INTO crepes!  and they had a super simple way of making them too, but dang, i forgot to write it down.  i've been wanting to find it ever since.  your recipe sounds like it.  is it french?

I made the recipe by chopping out everything I thought was superfulous from most other crepe recipes I saw. There's folks out there that put six or eight ingredients in their crepes. Why bother? Wink I think the closest recipe I saw to this one had butter or oil in the mix. I find that they turn out better (read: less greasy) when I spray the pan rather than have the oil in the mix.

Way back in high school, we made crepes for my French class -- I think that was a pretty simple recipe, but I have no idea how "authentic" this recipe is.

And, YES! I did take that photo -- I'm so stinkin' proud of myself for that one.  Grin

I don't know! I have no experience baking with soymilk. The recipe calls for a cup, so it wouldn't take much to try it. Let us know. Smiley

This is the recipe I use too but if I have buttermilk I use that and the crepes are even better Smiley we love them with lemon juice and sugar Smiley
