On a whim I bought some Grape-nuts cereal, and then promptly remembered why I never eat the stuff...I don't know how Grape-nuts fans still have teeth! Anyway, I decided to use them up in my baking, and try to make my husband's favorite cookie recipe more healthy at the same time. Here is the result. These are his new favorites, and that's saying something since he's kinda picky and not a big health nut. The cookies are a bit crunchy and have a really nice malty flavor to them. Enjoy!

Chocolate Chip Grape-nut Cookies

Makes about 50 cookies

Combine the following wet ingredients in a large bowl and mix well:

1C (2 sticks) butter
1C brown sugar
---------------------Cream together, then add and mix:
1 egg
2 tsp vanilla extract
C corn syrup
1/8 C molasses

In a separate bowl, combine and mix the following:

1 C grape-nuts cereal
C soy flour (may substitute white flour instead)
C nonfat instant dry milk (optionalif omitted add C white flour)
2 C whole wheat pastry flour
1tsp baking soda
tsp salt
C white flour

Combine wet and dry ingredients to form dough. The dough should be pretty firm and not sticky. (My hand mixer groans when I pull out this recipe). If it is still pretty sticky, add a little more white flour until you achieve a firm dough.



Add 2 C chocolate chips once you have the right dough consistency. Drop by tablespoons and bake 8-9 min @ 350 or until they just begin to brown on the edges. These cookies are best when not too brown, so err on the side of underdone. This dough freezes very well, just warm to room temperature before baking.
