I totally copied you!  I tried to make one with a sugar cookie (from a box because I was being lazy) bottom, but I had so many problems.  First it was undercooked and got soggy when I added the cheesecake layer, then it was overcooked and crunchy, then I tried a no bake cheesecake mix, but it was too thick to mix the colors all pretty.

Anyhow, I wound up making two brownie cheesecakes.  The first was to bring to the Bears game tailgate on Monday night:


and the second was to send to a friend who just got a big boy job :]


Thanks so much for the idea.  It opens up so many doors!!

I JUST MADE THIS!!!!! I only used four colors and used a larger pan than what I think I needed but it still looks amazing and I'm waiting for it to cool so we can eat it!!!! I only baked the brownie for a bout 25 minutes before adding the cheesecake on top.
since my account is new i cant post pictures yet but you can see them on my account. thanks so much for posting this, it was tons of fun to make! i know you put this up about three years ago but incase you still log in, thanks Smiley

So i would definietly loveee to make this but im terrified!!! so many recipes seem so complicated with the parchment paper and the soaking in water stuff   Huh ...I would like to do the same rainbow cheesecake but with the traditional graham crust. do u recommend this? do you soak yours in water?

There are quite a few complicated-looking recipes out there, which makes a lot of people rather frightened of it, but cheesecake is really pretty simple. I only avoided the graham cracker crust because I don't enjoy the taste, but you can add a bunch of food coloring to any recipe you wanna try. As for the water bath, I've never bothered...without it, the top of your cheesecake can crack, but I've never baked for anyone I've had to worry about impressing Cheesy

I love this cheesecake! I've made it twice now and it's a huge hit. I recently used it for an assignment in my advanced lighting class. I thought you'd appreciate it. Smiley
