rainbow cheesecake...now with two attempts! updated 15Mar08

I totally copied you!  I tried to make one with a sugar cookie (from a box because I was being lazy) bottom, but I had so many problems.  First it was undercooked and got soggy when I added the cheesecake layer, then it was overcooked and crunchy, then I tried a no bake cheesecake mix, but it was too thick to mix the colors all pretty.

Anyhow, I wound up making two brownie cheesecakes.  The first was to bring to the Bears game tailgate on Monday night:


and the second was to send to a friend who just got a big boy job :]

Oh, and I mixed mine in cups so I could pour them into the pan :]

I JUST MADE THIS!!!!! I only used four colors and used a larger pan than what I think I needed but it still looks amazing and I'm waiting for it to cool so we can eat it!!!! I only baked the brownie for a bout 25 minutes before adding the cheesecake on top.

So i would definietly loveee to make this but im terrified!!! so many recipes seem so complicated with the parchment paper and the soaking in water stuff    ...I would like to do the same rainbow cheesecake but with the traditional graham crust. do u recommend this? do you soak yours in water?

There are quite a few complicated-looking recipes out there, which makes a lot of people rather frightened of it, but cheesecake is really pretty simple. I only avoided the graham cracker crust because I don't enjoy the taste, but you can add a bunch of food coloring to any recipe you wanna try. As for the water bath, I've never bothered...without it, the top of your cheesecake can crack, but I've never baked for anyone I've had to worry about impressing
