...after a long day at work. I'm planning on making a bolero http://www.prima.co.uk/index.php/v1/Shrug but instead of using cathay I'm going too use http://www.garnstudio.com/lang/se/visgarn.php?garn=CottonViscose which is pretty much the same, cheaper and easier to get hold of for me. But cathay holds 100m/50g, and CottonViscose holds 110m/50g. Does this mean that I can get away with only 7 balls of yarn instead of the original 8?!

Does the pattern call for under 800 yards?  If so, then yes.

Probably not.  If you have 8 balls of 100 yds, you have 800 yds, but if you buy 7 balls of 110 yds, you only have 770 yds.  Since you can never be sure how much of that last ball you're going to use, it's safe to buy 8.  However, if you're going to make any modifications (i.e. short sleeves, etc) then you'd probably be ok.

Good luck!  That's really cute!
