most delicious pizza ever- Boboli crust with a light sweep of olive oil, then monterey jack cheese adn goat cheese (so delicious) topped with artichoke hearts. olives and red peppers sometimes too.
last night was pretty boring- morningstar farms "chik'n strips" fajita with a Fresh Express! bagged Salsa Supreme salad

Tonight I made gorgeous red okra sauteed with onions and tomatoes topped with chopped cilantro, plus red lentils with curry powder, turmeric, smoked paprika, black mustard seeds, onions, carrots, celery and some frozen peas thrown in at the very end.  Then I also made some quick and nutritious quinoa.  It was delicious and the okra was perfectly tender with just a little firmness and had the bright flavor of the cilantro. 

I have also been making a lot of fresh corn salads lately with the corn cut right off the cob.  I made one as a salsa the other night with cherry tomatoes, diced jalapenos, lime juice, cilantro and ripe mango.  A few days earlier I made one with a more Italian take with lemon cucumbers, heirloom tomato, chopped basil and some seasoned rice vinegar.

yum, love reading through all these great ideas!
we had people over last night, so i fancied it up a bit --
mushroom, sweet potato and blue cheese pie
sauteed french lentils (my new fave side dish)
sauteed leeks, brussels sprouts, beet greens and cabbage
mmmmmmmmmmmmmmmmm if i do say myself
